Grilling instructions:
Chicken & Pork Recipe - How to Season and Cook
Step 1 - Season Meat with Good Time Andy’s Premium Dry Rub
Step 1A - Place Chicken or Pork in a large ziplock bag.
Step 1B - Add one spoon full of dry rub to each side of protein
Step 1C - Seal ziplock bag and shake until all sides of Chicken or Pork is covered.
Step 2 - Cook Chicken or Pork on pre-heated grill (350 to 400 degrees). For best results use sear station for the first two steps
Step 2A - Place Chicken on grill skin side down and cook for 2 to 3 minutes (this is critical to keep the protein moist while cooking, see pic below)
Step 2B - Flip Chicken or Pork and cook for 2 to 3 minutes depending on the size
Step 2C - Flip Chicken and Cook for an additional 2 to 3 minutes depending on size or until protein starts to show fat:
Step 2D - Clear Fat and flit continue cooking for an additional minute or two depending on size.
Step 3 - Resting and Cutting the Chicken or Pork
Step 3A - Rest chicken or pork on a cutting board for 2 to 3 minutes.
Step 3B - Cut chicken or pork against the grain.
